Broccoli salad recipe

Yields9 Servings

Many versions of this classic salad can be found in delis, supermarkets and maybe in your mother’s recipe file. This one is very, very good and I can honestly say that I cannot make this as well as my mother.

My Mum’s Killer Broccoli Salad by Chef Craig

Salad Ingredients
 6 strips bacon
2 heads broccoli, cut into bite sized florets
 1⁄4 red onion, thinly sliced
1 cup (250 mL) grated old orange cheddar
 1⁄2 cup (125 mL) raisins
1 small tin mandarin oranges, drained
 Curried Mayo Dressing (recipe follows)
1⁄4 cup (60 mL) almonds or pecan halves, optional
Curried Mayo Dressing
 1 cup (250 mL) mayonnaise
1⁄3 cup (80 mL) white granulated sugar
2 tbsp (30 mL) red wine vinegar
 1⁄2 tsp (3 mL) salt
1 tsp (5 mL) ground black pepper
 2 cloves garlic, minced
1 tsp (5 mL) curry powder
For the salad:
1

Cut bacon into 1⁄3-inch (1-cm) pieces and crisp in a frying pan. Drain off excess fat and place bacon on a paper towel to cool. In a large mixing bowl, combine broccoli, onion, cheese, raisins, orange segments and the dressing and mix well. Let rest for several hours before serving so flavours can meld. Place in a large serving bowl and garnish with almonds, pecans or other nuts of your choice.
